Garlic reaches its peak during the British harvest from June to August, when "wet" garlic offers a succulent, mild flavor. While dried bulbs are a year-round pantry staple, the freshest domestic stocks are available in autumn. It is a concentrated source of vitamin B6, manganese, and potent sulfur compounds.
