Sea Bream

Sea bream (specifically Gilthead) peaks from July to October.

While it is available year-round due to extensive aquaculture in the Mediterranean, wild sea bream is at its best during the late summer and early autumn. During this window, the fish have a higher fat content and superior flavor before the water temperatures drop significantly for winter.
