Anchovy

Anchovies peak from April to June.

While they are available preserved in oil or salt year-round, fresh anchovies are strictly seasonal. This spring window coincides with their migration to shallower coastal waters in the Mediterranean for spawning, which is when the meat is at its prime quality. Outside of this period, they are rarely found fresh at fishmongers.
