Scallops peak from October to March. During these colder months, the meat is at its firmest and sweetest.

For sustainability, diver-caught scallops are the preferred choice, as this method is highly selective and causes no damage to the seabed. In contrast, dredged scallops are collected using heavy gear that can significantly impact marine habitats. Checking for MSC certification or local hand-dived sources ensures a lower environmental impact.
