Rock salmon, usually a name for small sharks like the spiny dogfish or starry smooth-hound, peaks from October to January. It is best during the winter when the meat is firmest. Because many shark species are slow to mature and have low reproductive rates, they are highly vulnerable to overfishing. Spiny dogfish populations have historically struggled, so it is important to check that any rock salmon is sourced from fisheries with strictly managed quotas to ensure the species can replenish.
