Prawns peak from June to August. During the summer, native king prawns and tiger prawns are at their most abundant. Most prawns available in the UK are either cold-water varieties from the North Atlantic or warm-water varieties farmed in Southeast Asia or South America. To ensure sustainability, look for organic certifications or closed-loop farming systems that avoid the destruction of coastal mangrove forests. Wild-caught options are best when sourced from fisheries using creels or traps to minimize seabed damage.
