Plaice peaks from May to December.

During these months, the fish has finished spawning and the flesh is at its thickest and most flavorful. Stocks in the North Sea and Eastern English Channel are currently well-managed, making them a reliable choice for sustainability. Fish caught by seines or light trawls are preferred to minimize impact on the seabed.
