This small, sweet-fleshed flatfish is at its prime during the winter months when it is most abundant and the quality is highest. Often overlooked in favor of more famous cousins, it is a fantastic sustainable choice, as stocks remain plentiful and it serves as an excellent eco-friendly alternative to plaice or sole.
