Arrowroot
Arrowroot is a starch extracted from the rhizomes of the tropical herb Maranta arundinacea. Primarily used as a gluten-free thickener, it produces clear, shimmering glazes and remains stable when mixed with acidic ingredients. It is easily digestible and frequently used in biscuits, puddings, and as an alternative to cornflour.
